As you may know, since the very beginning the girl & the fig has offered an exclusively “Rhône-alone” wine list.
We’ve always loved that featuring unique Rhône wines gives us an opportunity to begin a conversation with our guests, perhaps introduce them to something new, as well as to present talented and innovative producers we believe in.
This week: the girl & the fig, 2016 Rosé, Santa Barbara County
About the winemaking process:
We pick Grenache specifically for our rosé production. The grapes are crushed and immediately pressed to stainless tank for a long, cold fermentation. The wine is blended with co-ferments of Counoise, Cinsaut and Mourvèdre that are saingéed.
Saignée is a winemaking process where we “bleed” off a portion of slightly pink juice from a red must right after crush. We then filter and bottled early to capture brightness and vibrancy.
Bursting with aromas of framboise, tangerine, citrus notes, and some creamy, luscious elements. Dry and crisp on the palate. Plenty of natural acidity ensures a crisp, long finish.
At the girl & the fig we’d recommend pairing the girl & the fig, 2016 Rosé, Santa Barbara County with a belgian endive salad (spiced walnuts, green apples, mandarins, blue cheese dressing), wild flounder meunière (yukon potato purée, spinach, lemon-caper brown butter) and hard cheeses.
At home enjoy with seafood pasta with Tuscan hot oil.
