Vendredi Vocab: Quiche

Vendredi means “Friday” in French. Each week we add something new to our culinary vocabulary by delving into a word from our menu.


This week, we will delve into: Quiche


To begin, what is quiche? At its most basic, quiche is a savory dish consisting of a pastry crust filled with eggs and cream or milk, mixed with anything from cheeses and meats to seafood and vegetables.


Though considered a traditionally French dish, quiche actually originates in Germany. The word quiche derives from the German word kuchen, which means “cake.” Though German origins are generally agreed upon, there are also recorded recipes for egg and cream baked in a pie crust coming from 13th century Italy. The first time the English term “Quiche Lorraine” was used was in 1925, recorded in the Indiana Evening Gazette.


The most famous form of quiche, Quiche Lorraine, comes from what was once the German region known as the Kingdom of Lothringen, which is now the French region of Lorraine. The oldest recipe for quiche Lorraine called for an open faced pie (with a bread dough crust) filled with eggs, cream, and chopped bacon. It wasn’t until later that cheese was added, and the bread dough evolved into a puff pastry crust.


Because there is so much variety with what can be added to quiche, it is considered appropriate for breakfast, lunch, and an evening snack. But you know what? We love it all day at the girl & the fig because, quite frankly, it’s delicious!
